450g eye Fillet or sirloin steak, thinly sliced
180g Marsh Extra Tasty Cheddar cheese, sliced
2 tablespoons olive oil
1 large onion, thinly sliced (optional)
Salt and pepper to taste

Prepare the Sandwich:
Prep bread: Slice baguette lengthwise, leaving one side attached like a hinge. Lightly toast if desired.
Cook steak: Heat olive oil in a large skillet over medium-high heat. Season steak slices with salt and pepper. Cook for 2-3 minutes per side for medium doneness. Remove and rest.
Cook onions (optional): In the same pan, cook sliced onions until golden and caramelized, about 5-6 minutes.
Assemble: Spread chimichurri generously on both sides of the baguette. Layer with cooked steak, Marsh Extra Tasty Cheddar slices, and onions if using.
Melt cheese: Place assembled sandwich under grill for 1-2 minutes until cheese melts, or wrap in foil and warm in 180°C oven for 5 minutes.
Serve: Cut into portions and serve immediately while hot.
