Spicy Fried Chicken Burger 
Serves 4 people | Prep time: 30 minutes (plus 2 hours marinating) | Cook time: 15 minutes

Ingredients for the Chicken:
  • 4 chicken breast fillets (150g each), butterflied and pounded thin
  • 500ml buttermilk
  • 2 tsp hot sauce
  • 300g plain flour
  • 2 tsp paprika
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Vegetable oil for deep frying
For the Hot Honey:
  • 90ml R. Stephens Tasmanian Organic Honey
  • 1-2 tsp hot sauce (adjust to taste)
  • 1/4 tsp chilli flakes
  • Pinch of salt
For Assembly:
  • 4 brioche burger buns
  • 120g Marsh Extra Tasty Cheddar cheese, sliced
  • 2-3 jalapeños, sliced
  • 4 butter lettuce leaves
  • 2 tomatoes, sliced
  • 60ml mayonnaise
  • 30g butter for toasting buns
Instructions
  1. Marinate: Mix buttermilk and hot sauce. Add chicken, cover completely. Refrigerate 2+ hours.
  2. Make hot honey: Warm honey in saucepan, stir in hot sauce, chilli flakes, and salt. Cool.
  3. Prepare coating: Combine flour, paprika, cayenne, garlic powder, onion powder, salt, and pepper.
  4. Fry: Heat oil to 180°C. Dredge chicken in flour mixture. Fry 6-8 minutes until golden. Drain on paper towels.
  5. Assemble: Toast buttered buns. Layer mayo, lettuce, tomato, chicken, Marsh Extra Tasty Cheddar, jalapeños, and hot honey. Serve immediately.
